Below is a selection of the beers that we have released along with descriptions of the beers and the initial release dates.  For a full beer listing, please see our Untappd page.


Before the Birds.  Oak-aged saison refermented with fruit from our property.  2017's blend contained gooseberries, currants, jostaberries, and serviceberries and was blended into Bière de Pieces #3.


Bière de Pieces #1.   Blend of a blonde saison fermented in oak, a saison aged with apricots, and a gin-barrel-aged saison.


First released on draft only in May 2017.  First bottled in October 2017 as part of the Afterthought Blended Barrel membership (2017-2018).


Bière de Pieces #2.  Blend of a saison with Old World hops (Tradition), a saison brewed with aged hops (Rafters), and Saison Meer: Gin Barrel.


First released in bottles in October 2017 as part of the Afterthought Blended Barrel membership (2017-2018).


Bière de Pieces #3.  Blend of Before the Birds, Saison Meer, Saison Meer: Gin Barrel, and a version of Saison Meer fermented with local dandelion honey.


First bottled in October 2017.


Bière de Pieces #4.  Blend of Saison Meer: Gin Barrel, Saison Avec: Lemon Guava, and Rafters.


First bottled in October 2017.


Bière de Pieces #5.  Blend of Saison Meer: Gin Barrel and Faible.


First released in June 2018 on draft for the 2017-2018 Blended Barrel Member Party.


Black Currant.  Saison brewed entirely with Midwestern ingredients fermented in oak barrels with our house culture and further aged with black currants from Illinois.


First released in April 2018.


Black Raspberry.  Saison fermented in oak barrels with our house culture and then refermented with black raspberries from Michigan.


First released on draft only in June 2017.


Cherry & Raspberry.  Mixed fermentation beer refermented with cherries and raspberries.


First released on draft in June 2018 for the Lombard Ale Fest.


Faible.  An everyday saison brewed with New World hops and fermented with a blend of our house culture and traditional saccharomyces strains.


First released in April 2018.


Farmhouse Mild.  Petit saison brewed with pilsner malt and a rotating blend of adjunct grains.  Hopped with plenty of New World hops.  Fermented with our house culture.


First released in bottles in September 2017.


Mango.  Mixed fermentation beer refermented with mangoes.


First released in bottles in February 2018.


Paw Paw.  Saison brewed entirely with Midwestern ingredients fermented in oak barrels with our house culture and further aged with paw paw puree from Ohio.


First released in bottles in May 2018.


Petit Meer.  A table-style version of Saison Meer. Brewed with Indiana malt, Michigan Cascade and Centennial, and Lake Michigan water, then fermented in oak barrels with our mixed culture.


First released in bottles in October 2017.


Rafters.  Oak-fermented saison brewed with aged hops.


First brewed in 2017 and used as a blending component in Bière de Pieces #2 and Bière de Pieces #4.


Raspberry.  Ale refermented with Michigan raspberries.


Red Currant.  Saison Meer base aged with approximately 2 pounds per gallon of Illinois red currants.


First released on draft in June 2018 at the 2017-2018 Afterthought Blended Barrel Member Party.


Red Gooseberry.  Saison Meer base aged with approximately 2 pounds per gallon of Illinois red gooseberries.


First released on draft in June 2018 at the 2017-2018 Afterthought Blended Barrel Member Party.


Saison Amer: Denali & Mosaic.  Hoppy saison fermented in oak barrels with our house culture before being dry-hopped with Denali and Mosaic.


First released in bottles in October 2017.


Saison Auran.  Saison brewed with citrus zest, rose hips, and plenty of American hops fermented in oak barrels with our house culture.


First released on draft and in bottles in July 2017.


Saison Auran: Passion Fruit.  Brewed with citrus juice and zest and rose hips, then refermented with a small dose of passion fruit puree.


First released on draft in June 2018 at the Lombard Ale Fest.


Saison Avec: Apricot & Citra.  Saison fermented in oak barrels with our house culture, refermented with apricots from Michigan, and finally dry-hopped with Citra.


First released on draft only in May 2017.


Saison Avec: Gin Barrel & Yuzu.  Saison fermented in oak barrels with our house culture before maturing further in local gin barrels and ultimately finishing fermentation upon yuzu puree.


First released in bottles in June 2017.


Saison Avec: Lemon Guava.  Saison fermented in oak barrels with our house culture before refermenting with lemon guavas and then spending additional time in barrels.


Saison Avec: Lime & Yuzu.  Saison brewed with lime zest and juice and then fermented in an oak barrel with yuzu puree and our mixed culture.

Brewed for Illinois Craft Beer Week 2018.


Saison Avec: Motueka.  Saison fermented in oak barrels with our house culture and dry-hopped with Motueka.


First released in bottles in August 2017.


Saison Avec: Passion Fruit.  Saison fermented in oak barrels with our house culture and further aged with passion fruit puree.


First released on draft in May 2017 and released in bottles in June 2017.


Saison Illinois.  Saison brewed for our first anniversary and Illinois' 200th anniversary using all Illinois ingredients. Brewed with pilsner malt from Duffin Station (Sugar Grove, Illinois) and hops from Hallowed Hops (Lewistown, Illinois), then fermented with our house culture plus yeast from Omega Labs (Chicago, Illinois). 


First released in bottles in June 2018.


Saison Meer.  Saison brewed entirely with Midwestern ingredients and fermented in oak barrels with our house culture.


First released on draft only in May 2017.


Saison Meer: Buckwheat.  Mixed fermentation ale brewed with Midwestern ingredients (including Illinois buckwheat and Crystal hops) and aged in oak.


First released in bottles in April 2018.


Saison Meer: Dandelion.  Saison brewed entirely with Midwestern ingredients (including dandelions from our yard) and fermented in oak barrels with our house culture.


First released in bottles in October 2017 as part of the Afterthought Blended Barrel membership (2017-2018).


Saison Meer: Gin Barrel.  Saison brewed entirely with Midwestern ingredients and fermented in oak barrels with our house culture before maturing further in local gin barrels.


First released on draft in May 2017 and subsequently in bottles in June 2017.


Saison Meer: Gin Barrel & Dandelion.  Saison brewed entirely with Midwestern ingredients (including dandelions from our yard) and fermented in oak barrels with our house culture before maturing further in local gin barrels.


First released in bottles in October 2017 as part of the Afterthought Blended Barrel membership (2017-2018).


Saison Meer: Gin Barrel & Red Currant.  Saison with Midwestern ingredients fermented in oak barrels and blended with oak-aged saison re-fermented with red currants from Illinois.


First bottled in October 2017 as part of the Afterthought Blended Barrel membership (2017-2018).  


Saison Meer: Lilac.  Saison brewed with Midwestern ingredients -- including lilac flowers from family property -- and fermented in oak barrels.


First released in bottles in April 2018.


Saison Meer: Rhubarb.  Saison brewed entirely with Midwestern ingredients fermented in oak barrels with our house culture and further aged with organic rhubarb from Indiana.


First released in bottles in October 2017.


Tradition.  Saison brewed with Old World hops and fermented with our house culture and traditional saccharomyces strains.


Tradition: Oak-Aged.  Saison brewed with Old World hops and fermented with our house culture and traditional saccharomyces strains, then aged in oak barrels.


First released in bottles in September 2017.
